I hope you’re not sick of quinoa yet, because I’ve got another healthy recipe for you. What I love about these healthy quinoa muffins is that they’re like little omelets. Besides quinoa, these bite-size delights contain eggs, spinach and grated cheese.
This recipe makes 12 mini muffins so you can grab a handful for breakfast or a quick snack. Quinoa is the perfect snack food because it keep you feeling full for a long time. When I have a few of these in the morning, it holds me over ’til lunchtime.
Ingredients:
- 1 C. quinoa, cooked
- 1/2 C. mozzarella, shredded
- 2 egg whites
- 1/2 clove garlic, minced
- 1 tsp. salt
- 1/3 C. spinach leaves, chopped
Directions:
Preheat your oven to 350 degrees and spray a mini muffin tin with cooking spray.
Cook the quinoa.
Mix the quinoa with the cheese.
Add the egg whites, garlic, salt, and spinach leaves.
Spoon the mixture into mini muffin tins. Fill to the top.
Bake for 20 minutes. Let cool before serving.
