One of the best things about this healthy recipe is that this dessert is quick and easy to whip up. Make these when you are pressed for time, or when you want to show off your vegan cooking skills to friends and family.
If you are not vegan, or cannot find non-dairy butter, make this recipe with butter for the same tasty treat.
Yields: about 2 dozen cookies
Total time: 30 minutes
- 2 sticks non-dairy butter
- 2 C. granulated sugar
- 2 tsp. pure vanilla extract
- 2 C. all-purpose flour
- 1 1/2 tsp. ground cardamom
- 1 1/4 tsp. ground cinnamon
- 1 tsp. ground clove
- 1 tsp. ground ginger
- 1/4 tsp. salt
- 1 C. powdered sugar
Preheat oven to 350 degrees. Spray non-stick cooking spray onto several baking sheets.
In medium bowl combine non-dairy butter and sugar. Mix together until creamy. Add flour, vanilla, cardamom, cinnamon, clove, ginger and salt to butter mixture, stir together.
Take 1 to 2 Tablespoons of the batter and form into equally sized balls. Place dough balls onto greased baking sheets, spaced out evenly and place in the oven. Bake for 12 to 15 minutes or until cookies are lightly golden. Remove from oven and let cool for 5 minutes.
Add powdered sugar to a small bowl. After the cookies are slightly cooled, roll each dough ball in the powdered sugar to coat them. Set aside, and repeat with remaining cookies.
