OK, we love a great cupcake. But, we really love a great alcohol infused cupcake. Here is a recipe for a light, fluffy and oh so boozy Kiwi-Melon Champagne Cupcakes with a Melon-Vodka Frosting. Kiwi-Melon Champagne Cupcakes with a Melon-Vodka Frosting

Champagne Cupcake Ingredients

2 C. all-purpose flour

3. tsp. baking powder

1 tsp. salt

2/3 C. butter

1 ½ C. white sugar

¾ C. Champagne, or sparkling wine

6 egg whites

Kiwi-Champagne Filling Ingredients

1 Tbs. unflavored gelatin

1/4 C. water

5 kiwis, peeled and roughly chopped

2 C. whipped cream

2 Tbs. dry milk powder

1/4 C. Champagne or sparkling wine

Melon Vodka Frosting Ingredients

16-oz. cream cheese, softened

1/4 C. dry milk powder

1-1/2 C. powdered sugar

3 tsp. melon-infused vodka

A few drops of food coloring (optional)
