These Mint Melon Pops are a refreshing, healthy, and simple treat perfect for warm days. With a burst of fresh mint and juicy melon, these popsicles are a delightful mix of cooling flavors that both kids and adults will love.


Ingredients:

  • 2 cups fresh melon (such as watermelon, cantaloupe, or honeydew), cubed
  • 1 tablespoon honey or agave syrup (optional, for added sweetness)
  • 1/4 cup fresh mint leaves, chopped
  • Juice of 1/2 lime

Directions:

  1. Prepare the Ingredients
    • Place the melon cubes, honey (if using), chopped mint leaves, and lime juice in a blender or food processor.
  2. Blend Until Smooth
    • Blend the mixture until it’s smooth. If you prefer small melon or mint pieces for added texture, pulse the blender instead of blending continuously.
  3. Pour and Freeze
    • Pour the mixture evenly into popsicle molds. If you don’t have molds, you can use small paper cups with popsicle sticks inserted after 30 minutes of freezing.
    • Freeze for at least 4-6 hours, or until completely solid.
  4. Serve
    • To remove the pops, run warm water over the outside of the molds for a few seconds to help loosen them. Enjoy immediately for a refreshing treat!
