Ingredients:
For the Sweet Potatoes:
- 2 lbs. sweet potatoes, peeled and chopped
- 1/4 cup almond milk
- 2 1/2 tablespoons pure maple syrup
- 1 tablespoon vanilla extract
- 1 large egg
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon nutmeg
For the Topping:
- 1/3 cup chopped pecans
- 2 tablespoons whole wheat flour
- 3 tablespoons brown sugar
- 1/4 teaspoon cinnamon
- 1 tablespoon melted butter
Directions:
- Preheat your oven to 400°F and spray a nonstick baking pan with cooking spray.
- Line a baking sheet with aluminum foil and place the sweet potatoes on the sheet. Bake for 45 minutes or until tender, then remove from the oven and let them cool.
- Reduce the oven heat to 350°F.
- In a large bowl, combine the baked sweet potatoes, almond milk, maple syrup, vanilla extract, egg, cinnamon, salt, and nutmeg. Beat the mixture until smooth.
- Pour the sweet potato mixture into the prepared baking pan.
- For the topping, stir together the melted butter, flour, brown sugar, pecans, and cinnamon. Sprinkle the topping evenly over the sweet potato mixture.
- Bake for 30 minutes at 350°F.
