Healthy Sweet Potato Casserole

Ingredients:

For the Sweet Potatoes:

  • 2 lbs. sweet potatoes, peeled and chopped
  • 1/4 cup almond milk
  • 2 1/2 tablespoons pure maple syrup
  • 1 tablespoon vanilla extract
  • 1 large egg
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg

For the Topping:

  • 1/3 cup chopped pecans
  • 2 tablespoons whole wheat flour
  • 3 tablespoons brown sugar
  • 1/4 teaspoon cinnamon
  • 1 tablespoon melted butter

Directions:

  1. Preheat your oven to 400°F and spray a nonstick baking pan with cooking spray.
  2. Line a baking sheet with aluminum foil and place the sweet potatoes on the sheet. Bake for 45 minutes or until tender, then remove from the oven and let them cool.
  3. Reduce the oven heat to 350°F.
  4. In a large bowl, combine the baked sweet potatoes, almond milk, maple syrup, vanilla extract, egg, cinnamon, salt, and nutmeg. Beat the mixture until smooth.
  5. Pour the sweet potato mixture into the prepared baking pan.
  6. For the topping, stir together the melted butter, flour, brown sugar, pecans, and cinnamon. Sprinkle the topping evenly over the sweet potato mixture.
  7. Bake for 30 minutes at 350°F.
  8. Allow the casserole to cool before slicing and serving.
