Ingredients:

  • Olive oil
  • 2 cups low-sodium vegetable broth
  • 1 onion, finely chopped
  • 2 stalks celery, chopped
  • 1 tablespoon fresh basil, sliced thin (plus more for garnish)
  • 1 teaspoon fresh cilantro, finely chopped
  • 1/2 tablespoon garlic powder
  • 1 tablespoon tomato paste
  • 2 lbs. fresh tomatoes (Roma tomatoes work well)
  • Salt, to taste
  • Pepper, to taste
  • 1/3 cup Greek yogurt
  • Balsamic vinegar, for drizzling

Directions:

Step 1: Roast the Tomatoes

  1. Preheat your oven to 450°F (230°C).
  2. Quarter the tomatoes, removing the seeds, and place them on a baking sheet.
  3. Drizzle the tomatoes with olive oil and roast for 30 minutes, or until they start to caramelize and develop a golden color.

Step 2: Start the Soup Base

  1. Transfer the roasted tomatoes into a large stockpot.
  2. Add the vegetable broth, chopped onion, celery, basil, cilantro, garlic powder, and tomato paste. Stir well and bring the mixture to a rolling boil.

Step 3: Simmer and Season

  1. Once the soup reaches a boil, reduce the heat to low and let it simmer for at least 30 minutes.
  2. Taste the soup and add salt and pepper as needed.

Step 4: Blend the Soup

  1. After simmering, use an immersion blender to puree the soup until smooth. Alternatively, you can use a regular blender, blending half or all of the soup to your desired texture.
  2. For a slightly chunky texture, leave part of the soup unblended.

Step 5: Add Creaminess

  1. Stir in the Greek yogurt for a creamy consistency.

Step 6: Serve or Store

  1. Serve the soup immediately, garnished with fresh basil and a drizzle of balsamic vinegar for a burst of flavor.
  2. For meal prep, store the soup in the refrigerator for up to a week or freeze in an airtight container for up to a month.
