Carb-Free Beef Fried Rice

Fried rice is a guilty pleasure for many of us. So on late nights, rather than reaching for that take out menu and give into the greasy box of fried rice try making it at home yourself.

To cut down on carbs, I use healthier grain or omit the grains and use vegetables to emulate the rice. Cauliflower seems to do the trick for me.

I pulse the chopped cauliflower in a food processor until it becomes fine bits of cauliflower and then pop it in the microwave for 3 minutes covered. Remove the cauliflower from the bowl and let it sit on a paper towel to soak up some moisture. Then use it as “rice.” It’s a neat little trick that satisfies my cravings for fried rice.

  • ½ a head of cauliflower (pulsed, cooked and drained)
  • 3 whole organic cage free eggs
  • ½ cup cilantro finely minced
  • ½ cup green onions finely minced
  • 1 tsp. minced garlic
  • 1 tsp. minced garlic
  • 2/3 cup ground beef (10% fat)
  • 2 tsp. avocado oil
  • 2 tbsp. braggs soy
  • 1 tsp. salt
  • 1 tsp. white pepper


  1. Pulse and cook your cauliflower, then drain.
  2. Now heat a non stick pan with 1 tsp of avocado oil and add your ginger, garlic, onions and cilantro. Cook for 2 minutes or until fragrant.
  3. Remove the aromatics and place into a bowl.
  4. Now add another tsp of avocado oil on high heat and cook your beef.
  5. Brown your beef and break it into small pieces and add 1 tablespoon soy to it.
  6. Once the beef is done, add your cauliflower and aromatics to the pan and cook with all the rest of the seasoning for 2 minutes.
  7. Whisk your eggs and add into the pan.
  8. Stir and let the eggs cook lightly into the beef and cauliflower. Season again if you need more salt and pepper. I keep it less salty as I add hot sauce afterwards. But you can adjust the salt and soy level according to your liking.
