Salmon Pasta Salad

Ingredients:

  • 2 small salmon fillets, fully cooked
  • 2 oz. penne or spiral pasta, cooked, drained, and cooled
  • 1/2 pint cherry tomatoes, cut in half
  • 1/2 cup chopped broccoli
  • 1/2 cup mozzarella cheese, cut into thin strips (optional)
  • 1/4 cup chopped parsley
  • 2 tbsp. grated Parmesan cheese (optional)

For the Lemon Dressing:

  • 3 tbsp. olive oil
  • 2 tbsp. lemon juice
  • 1 clove garlic, minced
  • 1/4 tsp. dill weed
  • 1/4 tsp. grated lemon peel
  • Black pepper, to taste

Directions:

  1. Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dill weed, grated lemon peel, and black pepper until well combined.
