Paleo Cream of Mushroom Soup

Any dish with the word ‘cream’ in the title is not exactly your healthiest friend. So skip the high-fat canned stuff and make a vegan Paleo version at home. You won’t even notice the difference! It makes the perfect base for holiday casserole dishes, or just to be eaten on its own.

Serves: 4 / Prep: 5 mins. / Cook: 15 mins.

  • 16 oz. mushrooms, diced
  • 1 1/2 C. vegetable broth
  • 1 onion, diced
  • 1 can coconut cream
  • 2 gloves garlic
  • 1 T. thyme
  • Salt


  1. Add the mushrooms, broth, onion, garlic and salt to a large saucepan and combine.
  2. Heat for 10 minutes or until mushrooms are soft.
  3. Set aside to cool. Blend the mixture until smooth.
  4. Add the coconut cream and blend again.
  5. Replace on heat and add the mushrooms and thyme.
  6. Whisk until thick and serve.
