Pork Loin and Fresh Fruit Preserves

This delicious pork loin dish with a great side will be serve a flavorful addition for a holiday! Enjoy it with the whole family. Take your traditional pork chops and apple sauce recipe to new heights worthy of your Christmas dinner table. Marinate the pork a day or two ahead of time for even more flavor.


  • 1 lb of pork
  • 3 tbsp of olive oil
  • 1 tsp of oregano
  • 1 tsp of herbs
  • salt and pepper
  • 1 c. of bread crumbs
  • 1 egg, beaten
  • 2 c. of soy sauce
  • 2 c. of white rice, cooked
  • 1 c. of pineapple, cubed



  1. Marinate pork pieces with salt pepper, oregano, herbs and olive oil.
  2. Dip each pork piece in beaten egg, oregano, herbs and cover both sides with bread crumbs.
  3. Place pork in a buttered baking dish and bake for 30 minutes, until the pork is tender.
  4. Meanwhile, combine rice with pineapple, and cook for 20 minutes over medium heat, turning occasionally.
  5. Serve pork with the rice on the side.
