These Fiber-Rich Fish Tacos are a tasty, nutritious option for taco night! Packed with fiber-rich ingredients like black beans, avocado, and a slaw made from cabbage, these tacos provide a satisfying blend of textures and flavors. Ingredients:

For the Fish:

  • 1 lb. white fish (tilapia, cod, or mahi-mahi)
  • 1 tablespoon olive oil
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste

For the Fiber-Rich Slaw:

  • 1 cup shredded red cabbage
  • 1/2 cup shredded carrots
  • 1/2 cup black beans, drained and rinsed
  • 1 tablespoon lime juice
  • Salt and pepper, to taste

Toppings:

  • 1/2 avocado, diced
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup Greek yogurt or low-fat sour cream
  • Lime wedges for serving

Tortillas:

  • 8 small corn or whole-wheat tortillas (for added fiber)

Directions:

  1. Prepare the Fish
    • Preheat oven to 400°F (200°C).
    • Place the fish on a baking sheet lined with parchment paper. Drizzle with olive oil, then sprinkle chili powder, cumin, garlic powder, salt, and pepper over the fish.
    • Bake for 10-12 minutes, or until the fish flakes easily with a fork.
  2. Make the Fiber-Rich Slaw
    • In a large bowl, combine the shredded cabbage, carrots, and black beans.
    • Add lime juice, salt, and pepper, then toss to mix well. Set aside.
  3. Assemble the Tacos
    • Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side.
    • Flake the fish and distribute evenly across the tortillas.
    • Top each tortilla with a spoonful of slaw, diced avocado, a dollop of Greek yogurt or sour cream, and fresh cilantro.
