Fiesta Vegetable Soup

This hearty fiesta vegetable soup is a filling meal all on its own! Stir in some hot sauce to your bowl of soup if you like a little kick!

What you’ll need:

  • 2 tsp vegetable oil
  • 8 oz extra-lean Ontario Ground Turkey
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 1 tbsp chili powder
  • 1 tsp each ground cumin and dried oregano leaves
  • 1/2 tsp each salt and pepper
  • 1-1/2 cups chopped sweet yellow peppers
  • 1 cup chopped carrot
  • 4 cups no-salt-added chicken broth
  • 1 28-oz can diced tomatoes
  • 1 19-oz can black beans, drained and rinsed
  • 1/2 cup frozen corn kernels
  • 1 cup shredded cheddar cheese
  • 1-1/2 cups diced tomatoes

In a large pot, saute ground garlic, onion, chili powder, cumin, oregano, salt, pepper, and ground turkey over medium heat for about 5 minutes, or until the turkey is no longer pink. Add peppers, carrot, tomatoes, broth, and 1 cup water. Bring to a boil. Reduce heat, cover, and simmer for about 15 minutes. Add beans and corn, and simmer for another 3 minutes. Ladle into bowls and top with cheese and tomatoes.
