2 tsp. olive oil
1/3 C. onions, chopped
2 C. fresh Portobello mushroom, sliced
2 and ½ C. zucchini, sliced
½ C. tomato, chopped
3 Tbs. Parmesan, shredded
¼ tsp. black pepper
1 C. fat-free ricotta
6 whole wheat lasagna noodles, cooked
2 C. pasta sauce
1 C. shredded low-fat mozzarella
Preheat the oven to 375 degrees.
The first step is to heat the oil in a pan over medium heat. Add the onions, mushrooms, tomatoes and zucchini to the pan. Heat mixture until tender, or for about 5 minutes. Set aside.
Mix Parmesan, pepper and ricotta in a medium bowl.
Take half of the lasagna noodles and place flat in a baking dish. Add half the ricotta mixture to the top of the noodles, and half the vegetable mixture to the top of the noodles. Add half the pasta sauce and mozzarella cheese on top.
Add another flat layer of noodles on top. Continue adding the remaining layers of ricotta, vegetables and mozzarella.
Place baking dish in the oven and cook for about 30 minutes. Remove from oven, let cool for 5 to 10 minutes and serve hot.
