Quinoa, Chickpea, and Avocado Salad

I bet you never thought healthy could taste this good! Not only is this quinoa, chickpea, and avocado salad vegan, gluten-free, and dairy-free, but it’s also less than 250 calories for a 1-¼ cup serving. With 9 grams of protein, 8 grams of fiber, and only 1 gram of sugar, this refreshing salad is the perfect lunch for a day spent outdoors.



  • 1 cup grape tomatoes, quartered
  • 15 oz can garbanzo beans, rinsed and drained
  • 1 cup quinoa, cooked
  • 2 tbsp red onion, minced
  • 2 tbsp cilantro, minced
  • 1 ½ limes, juice
  • Kosher salt and fresh pepper, to taste
  • 1 cup cucumber, diced
  • 4 oz avocado, diced



Combine all of the ingredients except for the avocado and cucumber, and add them just before serving. Be sure to keep this delicious meal in the refrigerator until you are ready to eat it.
