I’ll admit it, I don’t always eat breakfast like I should. Sometimes I’d rather just sleep in an extra couple of minutes than take the time to start my day off right. But, one night I had nothing to make for dinner, and decided to throw a few random items in my pantry and fridge together. Voila! I created my new favorite breakfast. The next morning, I couldn’t wait to get up to make my new meal of choice.
This is what I came up with. It took me a whole two minutes to make it, and I truly felt an energy boost after eating it. If you like avocados and cottage cheese, you have to try this out.
What You Need:
- Half an avocado (cut into small slices)
- A couple scoops of cottage cheese
- A slice of whole grain bread
How To Make It:
First, toast your bread. I like to make mine a little bit more toasted than usual so the cottage cheese doesn’t make it soggy. Spread your cottage cheese across the toast. Top it off with the slices of avocado and enjoy!
