Campfire Kabobs

I love the endless variety of kabobs you can grill. But when I go camping, I don't bring a grill with me. So I decided to find a grill-free way to make one of my favorite meals. You'll be saying goodbye to the grill and hello to the campfire with these delicious chicken kabobs.


  • Olive oil
  • Pinch of pepper
  • Pinch of salt
  • 2 chopped chicken breasts cut into 1 1/4-inch cubes
  • 2 red peppers cut into 1 inch squares
  • 2 onions cut into 1 inch squares
  • 2 yellow peppers cut into 1 inch squares


Mix olive oil and spices in a large bowl. Add the chicken to the bowl and mix until the chicken is fully coated. Let the chicken chill in the refrigerator for about two hours. Spread chicken on skewers alternating with the red pepper, yellow pepper and onion. Drizzle pepper and olive oil over skewers and cook over the fire for 7-9 minutes. Serve hot and enjoy!
