Tofu Stuffed Peppers

In need of a quick and easy meatless meal? I've got just what you're looking for! Try out these tofu stuffed peppers for a healthy and satisfying main course!


  • 1/2 cup brown rice, uncooked
  • 1 cup water 
  • 1 tbsp. olive oil
  • 1 garlic clove, minced
  • 6 oz. extra-firm tofu, drained and diced
  • 1 cup marinara sauce
  • 2 bell peppers, seeded
  • 1/2 cup shredded mozzarella


Preheat the oven to 350 degrees. In a pot, bring rice and water to a boil. Reduce to low heat and cover for 25 minutes. In a skillet, heat the oil over medium heat. Add in tofu and garlic and stir for about five minutes. Add half of the marinara sauce, salt and pepper. Cook until tofu begins to brown. Sit the peppers upright in a oven-safe dish. Add equal amounts of rice to both peppers. Layer tofu mixture on top of the rice and add another layer of marinara. Top with mozzarella and bake for 20 minutes.
