Here’s a simple lunch recipe that is great to take to work! It incorporates salad and edamame, that is then stuffed into a pita shell. Try it out for yourself!
- Spring greens mix
- 1 3 oz. can of tuna, drained
- 1 tbsp. vinaigrette
- 1/4 cup cherry tomatoes
- 1 whole-wheat pita
- Toss spring mix, tomatoes, and vinaigrette to combine.
- Stuff the lettuce mixture inside a pita.
- Then stuff tuna on top, and enjoy!
