Spring Mix Tuna Salad

  1. Need a quick and easy lunch that you can take on the go? This recipe is for you! It only requires a few ingredients, and it’s healthier than those pre-made cafeteria salads!

    Ingredients:

    • Spring mix greens 
    • 1 3 oz. can of tuna
    • 2 tbsp. all-purpose vinaigrette
    • 2-3 slices of red onion
    • 1/4 cup cherry tomatoes
    • 1/4 cup chickpeas
    • A couple slices of cucumber

    Directions:

    1. Drain tuna, then combine with spring mix greens and vegetables.
    2. Drizzle vinaigrette on top and toss to coat.
