You can use cabbage as a pasta substitute and slather it with meat sauce for an enjoyable dinner! Here’s a super easy recipe!
For the sauce, you’ll need:
- 1 pound pork sausage
- 1 green pepper, chopped
- 1 cup chopped onion
- 1 cup tomato juice
- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 2 tablespoons minced fresh oregano or 2 teaspoons dried oregano
- 1/4 teaspoon salt
- A dash of pepper
For the cabbage “pasta”:
- 1/4 cup butter
- 1 medium head cabbage, thinly sliced
Cook together the sausage, onion, and green pepper until the meat is brown. Drain the oil when done. Stir in the tomatoes, tomato juice, oregano, salt, and pepper. Let the sauce simmer for 1 hour in low heat. Microwave butter to melt. Over medium heat, saute the cabbage in the butter for about 15 minutes. Place in a serving bowl or platter and top with the meat sauce.
