Guilt-Free Cottage Cheese Pancakes

Who needs regular pancakes when you can enjoy these cottage cheese pancakes without feeling guilty! It may sound like an odd recipe, but try them out and you’ll be hooked. The cottage cheese gives the pancakes such a delicious flavor, and they’re even more fluffy than traditional pancakes.


  • 6 eggs
  • 1 1/2 cup cottage cheese
  • 1/2 tsp. salt
  • 1/2 cup buckwheat flour


  1. In bowl beat eggs then add other ingredients.
  2. If using blender or stand mixer, add ingredients in order. Don’t over mix.
  3. Heat a greased skillet.
  4. Once each side begins to brown, flip it over.
  5. Allow the pancakes to cool before serving.
