This dressing is just as simple to make as the rest and perfect still for your salad. It has its own flavor derived from the combination of red wine vinegar and a bit of Dijon mustard.
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 2 tbsp. water
- 2 tsp. minced shallots
- 1/2 tsp. Dijon mustard
- freshly ground pepper to taste
- In a small bowl, whisk together all ingredients.
- Transfer to a jar with a tight-fitting lid to chill until ready to use.
