Eggs Baked in Avocado

This egg and avocado recipe is a great, healthy option for breakfast. Eggs are packed with protein that will keep you going throughout the day. Avocados are low in sugar, but high in fiber. Put them together and you have the ultimate super food dish. 

Ingredients

•    4 ripe avocados, halved
•    8 eggs
•    2 limes
•    salt
•    Chopped cilantro
•    Sliced scallions

Directions

1.    Preheat the oven to 450 degrees.
2.    Remove pits from avocados and scoop out the middle of each half so that the well is large enough to hold the egg.
3.    Sprinkle salt and lime juice over avocados and place on a baking sheet.
4.    Crack 1 egg into each avocado half.
5.    Bake for 10-12 minutes.
6.    Serve with sprinkled cilantro and scallions
