Avocado Walnut Spinach Salad

Sliced avocado is a great addition to any salad. Four major antioxidants found in avocados are proven to improve skin density, tone and appearance. How awesome is that? It makes healthy snacking that much more enticing.

Ingredients

•    1 ripe avocado, cut in slices
•    2 cups washed, fresh spinach
•    ½ cup walnuts, halved
•    8 cherry tomatoes, halved
•    ½ cup feta cheese, crumbled
•    2 tablespoons olive oil
•    salt and pepper, to taste

Directions

1.    Wash and removed pit from avocado. Slice thinly.
2.    Separate spinach onto two plates
3.    Pour ¼ cup walnuts, ½ an avocado, 4 cherry tomatoes and ¼ cup feta cheese onto each bed of spinach.
4.    Sprinkle each salad with 1 tablespoon of olive oil.
5.    Season with salt and pepper and serve.
