Bananas and peanut butter are always a delicious combination! Here are two variations to this classic pairing that are low-calorie and even more enjoyable!
Peanut Butter and Banana Energy Balls. Mix 2 ½ cups oatmeal and 1 teaspoon ground cinnamon in a bowl. Mash 2 large, ripe bananas (to make 1 cup) and stir into the oatmeal and cinnamon mixture, together with ¼ cup creamy peanut butter and tablespoons honey. Shape into balls. Line them up in a sealable container and refrigerate until chilled.
Chocolate and Peanut Butter Banana Sandwich Bites. Slice ripe bananas into ¼-inch cuts. Spread peanut butter on a slice and put another slice on top. Place the mini sandwiches in the freezer until they harden a bit. In a microwavable bowl, mix a tablespoon of coconut oil and about ½ cup of dark chocolate chips. Microwave for one minute, stir, and microwave again for another 30 seconds. Keep stirring until all the chocolate has melted. Take a slice of frozen banana and peanut butter sandwich and dip half of it in the chocolate. Freeze again for 15 minutes to let the chocolate harden in place.
