Baked Sweet Potato Wedges

Try making our delicious baked sweet potato wedges for a healthier side dish. This is s great way to get the vitamins of sweet potatoes in an easy to eat way. Using a bit of olive oil makes the outside slightly crisp while the inside of the sweet potato remains soft and delicious. 

Baked Sweet Potato Wedges

Serves: 4 to 6

Total Time: 65 minutes

Ingredients

  • 3 Lg. sweet potatoes
  • 1 tsp. salt
  • 1 tsp. dried oregano
  • 2 Tbs. olive oil
  • 1 tsp. ground black pepper

Directions

  1. Preheat oven to 350 degrees. 
  2. Lightly coat a non-stick, or glass baking dish with olive oil.
  3. Wash and peel sweet potatoes.  Then slice each sweet potato into medium sized wedges. Place on baking sheet and turn over to lightly coat with olive oil. Sprinkle sweet potatoes with salt, oregano and black pepper. 
  4. Place in the oven and bake for about 60 minutes.
