Thank goodness these baked zucchini fries are healthy, because they sure are addicting! Egg-free, vegan, and low in calories, these crispy fries taste even better dipped in your sauce of choice.
Yield:
- About 40 fries
Ingredients:
- 2-3 small zucchini, sliced into fries
- ¼ cup chickpea flour
- ½ cup non-dairy milk of choice
- 1 cup breadcrumbs (made by toasting gluten-free bread and putting it through a food processor)
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
Directions:
Preheat your oven to 420°F. Lightly grease a cooling rack, place it on a baking tray, and set it aside. Add the flour and spices together in a bowl, milk in another, and breadcrumbs in a third. Dip each zucchini fry in the flour, then the milk, and then the breadcrumbs. Place them on the cooling rack, and bake for 18-19 minutes.
