This is one of the simplest salads that you can make, but looks like it would be served at a gourmet restaurant!
15 minutes preparation + 15 minutes cooking
- 2 lg pears, about 1 lb.
- 1 Tbs. fresh lemon juice
- 4 oz. Gorgonzola or other creamy blue cheese
- 6 C. mixed greens, washed, dried and torn into bite-sized pieces
- 1/2 C. vinaigrette dressing (bottled or homemade)
- 1 C. Walnuts
Peel and core the pears; cut them into 1/2-inch chunks and toss with lemon juice. Cover and refrigerate until needed, up to 2 hours.
Crumble the cheese into small bits; cover and refrigerate until needed
When you’re ready to serve, toss the pears, cheese, walnuts and greens together with as much of the dressing as you like. Serve immediately.
